Have a date night IN with an easy to make at home pizza, local brew and a Netflix Movie.

Fun, romance, action and adventure for $20 bucks or less? How can you beat that?

Pizza for movie night in.

Have different tastes in pizza toppings? No problem, just do a half and half.

Movie Night Pizza Recipe

There seriously is NOTHING better than making pizza at home and watching the latest Red Box Flick in front of your own cozy fireplace!

Preheat Oven to 425′

1 pizza dough, store bought or from your favorite pizza shop
A palm full all-purpose flour or cornmeal
Extra-virgin olive oil, for drizzling, plus 2 tablespoons
2 tablespoons finely chopped rosemary leaves, a couple of sprigs
2 tablespoons finely chopped fresh basil (you can substitute dry herbs if you don’t have fresh… I love the Italian Blends!)
Coarse salt

Crust:
If pizza dough is frozen, thaw for 5 hours, punch down and roll out and let rise once approx 1 hour.

On a round pizza stone or pan or on a rectangular baking sheet, using flour or cornmeal to dust the dough, spread out the dough to form your crust. If you are using a baking sheet, drizzle pan with extra-virgin olive oil then set crust in place. Poke the pizza dough in several areas with the tines of a fork. Drizzle the dough with extra-virgin olive oil then season it with finely chopped rosemary & basil and a little salt. Make sure the oven has come up to temp and then place in the oven for 8- 10 minutes.

Take Crust out and add your favorite pizza toppings or try one of my varieties and of course the cheese working all the way to the edges.

VARIATIONS: Sausage & Fresh Tomato

  • 1 jar of Prego Heart Healthy Sauce
  • 1 package or whole cooked Spicy Italian sausage sliced
  • add 1-2 teaspoons red pepper flakes (ONLY if you like spicy!)
  • 1-2 tablespoons fresh basil
  • 2 Fresh Roma tomatoes Thinly sliced
  • 2 cups Mozzarella Cheese

Cover pizza with sauce then sausage cover with cheese &
top with ribbons of basil and tomato slices.

* Omit the sausage for a Margaretta Pizza.

Return the pizza to the oven and bake until cheese is golden, another 8 to 12 minutes. Not Boring Veggie
Brown in EVOO..
1-2 chopped red peppers,
1 lb fresh mushrooms,
1 onion,
3 cloves garlic,
1 small can chopped jalapeno’s or green chili’s
1-2 tsp red pepper flakes

SAUCE

I use Prego jazzed up with some fresh onions & garlic browned in EVOO
1 teaspoon dried Italian Spices
1 package (2 cups) shredded mozzarella

* Optional 1/2 cup grated Cheese Blends (Romano, Parmesan) sprinkled on top.

Return the pizza to the oven and bake until cheese is golden, another 8 to 12 minutes.

Just add your favorite microbrew, an action flick for him, chick flick for her and you have a fabulous date night for 1/10th the price of going out on the town. This happens to be a great choice if you live near a Rock Bottom Brewery.

And as promised the secret to a man’s heart… A cold brew served in a frosty mug.  I seriously think my hunky hubby fell in love the day I brought beer mugs for his freezer.  Even cheap beer tastes good in a frosty mug!  But this happens to be AWESOME beer, fresh from the downtown Denver Rock Bottom Brewery.  OH MY Gosh it’s totally addictive!  Look at this head…

Olathe Sweet Corn Salsa – Recipe & Directions

Grilled Corn Salsa

Sometimes it’s nice to just stay home and have a little romance and fun while cooking together. Cooking together cuts the work in half and creating a meal together can be really sexy.

Sometime the week before, visit your local Farmers Market  and you should be able to have all of the ingredients for a fabulous Grilled Corn Salsa with a little California twist.

Visit your local farmers Market this week and purchase:

  • 6 ears of Olathe Sweet Corn,
  • 2 Poblano Peppers,
  • 1 Jalapeno or Anaheim Pepper (optional)
  • 1 bunch of cilantro (optional)
  • 1 red pepper (optional)
  • 1 red onion
  • 1 Tbsp local honey
  • Juice of one fresh lime juice
  • 2 avocado’s (optional) – California twist
  • Salt and pepper to taste
Fresh grilled corn salsa

Combine corn, chopped onions, salt and pepper.


Directions

  1. Turn your grill on to medium to preheat.
  2. Leave the husks on the corn and soak them in water. Remove the silks but leave the husks on. The water trapped inside the husks steams the sweet corn for the most amazing results. . it’s ok if they look burned.. it will be fabulous!  Grill on medium heat for 15 to 20 minutes.
  3. Place your peppers on the grill for 15 minutes or until they are blistered.  Take them off the grill and immediately put them in a plastic bag. This makes it much easier to take the outside skins off. After a few minutes in the bag, peel the skins off, pull off the stem and the inside membranes and chop.
  4. Chop the red onion and cilantro finely.
  5. Shuck the cooled corn and hold either on the top of a bunt pan like the video shows or with a smaller bowl inverted into a bigger bowl and slice the kernels off of the corn cob.
  6. Into the bowl of corn, combine all of the ingredients of choice above. If you love avocado chop it in the skin into cubes and add at the last minute so it keeps its shape.
  7. Spread tortilla chips on a baking sheet and heat at 400 for 3 minutes. Even if your chips are a little stale this will make them taste fresh, crispy and hot.
  8. You can even eat this with a spoon it’s so wonderful.
  9. Keep it simple with the meat or fish to go with it.  Brush Extra Virgin Olive Oil on any meat, chicken or fish and season with salt and pepper adding any other seasoning you prefer.  Grill after you take the corn off the grill and serve up along side it.

The inspiration for this Salsa came from Barb at Vino Luci’s recipe. As usual I didn’t have everything she listed in her recipe and I like things a bit spicier so I added the Anaheim pepper that I had on hand. I thought I had some cilantro but didn’t but I did have some Avocado’s so we gave those a try. The combinations of the the spice of the peppers, sweet of the honey and smooth of the avocado was unbelievably delicious.

Keep it simple with the meat or fish to go with it.  Brush Extra Virgin Olive Oil on any meat, chicken or fish and season with salt and pepper adding any other seasoning you prefer.  Grill the meat after you take the vegetables off.

Pour a glass of your favorite wine, enjoy the meal, each other and a DVD at home.

Starting a new tradition this year with celebrity chefs from across the country, a juried art exhibit with more than 30 regionally and nationally recognized artists food and presentation experts and a Palette of Pairings tasting including wine and spirits, Snowmass Colorado will be placing itself on the map for a gourmet destination in this mountaintop paradise.

Friday August 13th through Sunday August 15th join with foodies, wine connoisseurs and art lovers to indulge yourself and awaken all of your senses in this sumptuous weekend getaway.

Art lovers will gather Saturday form 10 a.m. to 6 p.m. and Sunday 10 a.m. to 4 p.m. to enjoy a juried show of more than 30 artists who will be showing and selling their wares throughout the Snowmass mall.

For the foodies in the crowd, PBS Chef Christy Rost will kick off the morning as she teaches you “The Art of Presentation” describing how to impress guests by bringing it all together for a memorable dinner.

Saturday also include cooking workshops by two renowned Celebrity Chefs, Executive Chef Portale  and Executive Chef Tourondel. Following will be a panel discussion on New American Cuisine & Local Foods moderated by Ryan Hardy, Executive Chef of The Little Nell.

Saturday from 4:00 to 6:00 p.m., Executive Chefs Bonanno and Rost along with 20 or more Aspen Valley chefs, will prepare and serve small gourmet plate dishes in a two hour “Palate of Pairings” matching their dishes with selected wine and spirits. Event goers can walk from booth to booth sampling each chef’s specially prepared dish.

Adults go wild at the Cheyenne Mountain Zoo

The Cheyenne Rocky Mountain Zoo is renowned for it’s gorgeous location and ever expanding state of the art wild animal enclosures. On Thursday August the fifth, it will take on a new type of event for adults only.

The award winning Chef Beau and Wildthings catering will present delicious food while Bristol Brewing and Sovereignty Wines will provide mouth watering beverage options.

Also included in the nights festivities are a concert by Martini Shotan original six-piece Pop-Rock band with horns based out of Southern Colorado. Major influences of band are Barenaked Ladies, Reel Big Fish, and 311. (information courtesy of Reverbnation)
